Apple Spice Muffins
|Shortening||1⁄4 Cup (4 tbs)|
|Granulated sugar||3⁄4 Cup (12 tbs)|
|Lemon juice||15 Milliliter|
|Flour||1 1⁄2 Cup (24 tbs)|
|Baking soda||1 Teaspoon|
|Ground nutmeg||1⁄4 Teaspoon|
|Ground cloves||1⁄4 Teaspoon|
|Floured raisins||1⁄4 Cup (4 tbs)|
|Walnuts chopped||1⁄4 Cup (4 tbs)|
In a bowl cream together shortening and sugar.
Add eggs and mix well.
Add applesauce, milk and lemon juice.
In another bowl, sift together flour, salt and baking soda.
Add cinnamon, nutmeg and cloves.
Pour this dry mixture gradually into the liquid mixture.
Add raisins and nuts and mix together.
Spoon batter into prepared muffin pan.
Bake on High for 2 to 2 1/2 minutes, turning halfway through cooking time.
Let stand for 3 to 5 minutes.
