Banana Oat Bran Muffins
|All purpose flour||1 1⁄4 Cup (20 tbs)|
|Oat bran||3⁄4 Cup (12 tbs)|
|Baking powder||1 Teaspoon|
|Baking soda||1 Teaspoon|
|Vegetable oil||1⁄3 Cup (5.33 tbs)|
|Lightly packed brown sugar||1⁄3 Cup (5.33 tbs)|
|Mashed banana||1 Cup (16 tbs)|
|Buttermilk/Sour milk||125 Milliliter|
In a large bowl, combine flour, oat bran, baking powder, baking soda and salt.
In another bowl, whisk together egg, oil, brown sugar, banana, buttermilk and molasses.
Add to dry ingredients, stirring just until blended and lumpy.
Spoon batter into prepared muffin tin, filling cups three-quarters full.
Bake in preheated oven for 20 to 25 minutes.
