|Cocoa||1⁄3 Cup (5.33 tbs)|
|Baking powder||3 1⁄2 Teaspoon|
|Milk||1 Cup (16 tbs)|
|Vegetable oil||1⁄4 Cup (4 tbs), melted|
In a large bowl, combine flour, sugar, cocoa, baking powder and salt.
In another bowl, beat together egg, milk and oil.
Pour into the flour mixture and stir just until combined.
Do not overmix.
Spoon batter into prepared muffin tin, filling cups three-quarters full.
Bake in preheated oven for 20 to 25 minutes.
Chocolate Nut Muffins: Add 1/2 cup (125 mL) chopped walnuts to the batter and bake as above.
