Lemon Oat Blueberry Muffins
|All purpose flour||250 Milliliter|
|Baking powder||15 Milliliter|
|Packed brown sugar||175 Milliliter|
|Rolled oats||175 Milliliter|
|Vegetable oil||50 Milliliter|
In a large bowl, combine flour, baking powder, salt, nutmeg and brown sugar.
Stir with a fork until well blended.
Add oats and lemon zest.
In another bowl, whisk together egg, oil and milk.
Add to flour mixture, stirring just until blended and moistened.
Fold in blueberries.
Spoon batter into prepared muffin tin, filling cups three-quarters full.
Bake in preheated oven for 15 to 20 minutes.
