Fruity Oatmeal Muffins
|All purpose flour||1 Cup (16 tbs)|
|Baking powder||1 Teaspoon|
|Pumpkin pie spice||1⁄4 Teaspoon|
|Dry fruit||1 Cup (16 tbs)|
|Softened butter/Softened margarine||1⁄2 Cup (8 tbs)|
|Granulated sugar||2⁄3 Cup (10.67 tbs)|
|Rolled oats||1⁄3 Cup (5.33 tbs)|
In a small bowl, combine flour, baking powder and pumpkin pie spice.
Take 1 tbsp (15 mL) of this flour mixture and toss in another bowl, with dried fruit.
In a large bowl, beat butter and sugar on medium speed until light and fluffy.
Beat in eggs and blend well.
Reduce speed to low and add vanilla.
Gradually add flour mixture, beating just until blended.
Stir in fruit mixture and oats.
Pour batter into prepared muffin tin, filling cups three-quarters full.
Bake in preheated oven for 20 minutes or until golden brown.
