Orange Raisin Muffins

These orange raisin muffins are filled with raisns and flavored with orange juice. Great for fruit lovers, these muffins hav the additional flavor of buttermilk sweetened with sugar.
  All purpose flour 2 Cup (32 tbs)
  Granulated sugar 1⁄3 Cup (5.33 tbs)
  Salt 1⁄2 Teaspoon
  Baking soda 3⁄4 Teaspoon
  Raisins 1⁄2 Cup (8 tbs)
  Egg 1
  Orange juice 75 Milliliter
  Grated orange zest 2 Milliliter
  Buttermilk/Sour milk 150 Milliliter
  Shortening 75 Milliliter

In a large bowl, mix together flour, sugar, salt and baking soda.
Add raisins.
In a smaller bowl, combine beaten egg, orange juice, zest, buttermilk and shortening.
Pour into dry ingredients and stir just until moistened and blended.
Spoon batter into prepared muffin tin, filling cups three-quarters full.
Bake in preheated oven for 25 minutes.
HINT: To make 1 cup (250 mL) of sour milk, measure 1 tbsp (15 mL) vinegar or lemon juice into a measuring cup.
Then fill to 1 cup (250 mL) with milk.
Let stand about 5 minutes before using in your recipe.
