Apple Date Oatmeal Muffins
|Quick oats||175 Milliliter|
|Firmly packed light brown sugar||5 Medium|
|All purpose flour||235 Milliliter|
|Granulated sugar||25 Milliliter|
|Baking powder||10 Milliliter|
|Grated orange zest||15 Milliliter|
|Orange juice||125 Milliliter|
In a small skillet over medium heat, cook 1/3 cup (75 mL) oats, stirring often, for 3 to 4 minutes or until golden.
Remove from heat and stir in brown sugar and cinnamon.
Set aside for topping.
In a large bowl, combine remaining oats, flour, sugar and baking powder.
Make a well in the center.
In another bowl, combine zest, juice, egg and margarine.
Add to the flour mixture, stirring just until moistened.
Fold in apple and dates.
Spoon batter into prepared muffin tin, filling cups two-thirds full.
Sprinkle with topping.
Bake in preheated oven for 20 to 25 minutes.
