Meal-In-One Muffin

The meal in a muffin recipe is filling muffn recipe made with deviled ham and chopped veggies. The shredded carrot and chopped celery along with onions make this muffin a filling meal on the go. Baked with cheddar cheese, these muffins are really delicious and savory.
Ingredients
  Butter/Margarine 1 Tablespoon
  Finley chopped onion 2 Tablespoon
  Finley chopped celery 2 Tablespoon
  Shredded carrot 2 Tablespoon
  Deviled ham 4 1⁄2 Ounce
  Biscuit mix 2 Cup (32 tbs)
  Granulated sugar 1 Tablespoon
  Shredded cheddar cheese 1⁄2 Cup (8 tbs)
  Egg 1
  Milk 150 Milliliter
Directions

In a small frying pan, heat butter over medium heat.
Add onion, celery and carrot, cooking until tender but not brown.
Allow to cool.
Stir in ham and set aside.
In a medium bowl, combine biscuit mix, sugar, cheese, egg and milk.
Beat with a fork for 1 minute.
Spoon into prepared muffin tin, filling cups two-thirds full.
Make an indentation in center of each and spoon in ham mixture.
Bake in preheated oven for 18 to 20 minutes or until browned.
