|Just-a-minute mix||2 1⁄2 Cup (40 tbs)|
|Granulated sugar||3 Tablespoon|
|Milk||3⁄4 Cup (12 tbs)|
|Egg||1 , beaten|
In a large bowl, combine mix and sugar.
Add milk and egg, stirring just until moistened.
Batter will be lumpy.
Spoon batter into prepared muffin tin.
Bake in preheated oven for 20 to 25 minutes.
NOTE: You can add raisins, blueberries or any other fruits, as well as chocolate chips - whatever you have on hand.
HINT: If you have saved egg yolks from previous recipes, use them in place of whole eggs.
Use 2 yolks for every whole egg.
