Smoked Sausage Corn Muffins

smoked sausage corn muffins are delicious and filling muffins. Made with heavenly smoked sausages and baked with cornmeal for a healthy combo, this muffin can be served both at a meal or as a snack.
Ingredients
  Smoked sausage 8 Ounce
  All purpose flour 1 Cup (16 tbs)
  Yellow cornmeal 3⁄4 Cup (12 tbs)
  Granulated sugar 1⁄4 Cup (4 tbs)
  Baking powder 1 Tablespoon
  Buttermilk 1 Cup (16 tbs)
  Vegetable oil 1⁄4 Cup (4 tbs)
  Eggs 2 , beaten
Directions

Cut sausage into quarters lengthwise, then cut crosswise into 1/4-inch (5 mm) pieces.
In a skillet over medium heat, lightly brown sausage.
Remove from skillet and drain on paper towels.
In a large bowl, combine flour, cornmeal, sugar and baking powder.
Add buttermilk, oil, eggs and sausage, stirring just until blended.
Spoon batter into prepared muffin tin, filling cups three-quarters full.
Bake in preheated oven for 15 minutes or until golden brown.
NOTE: Delicious with scrambled eggs in place of toast.
