Oat Or Bran Muffins
|Vegetable oil/Shortening||2 Tablespoon|
|Soured skim milk||250 Milliliter|
|Baking soda||1⁄2 Teaspoon|
|All bran cereal/Rolled oats||2⁄3 Cup (10.67 tbs)|
|Biscuit mix||1 1⁄3 Cup (21.33 tbs)|
|Packed brown sugar||1⁄3 Cup (5.33 tbs)|
In a large bowl, beat egg.
Add oil, milk, baking soda and All-Bran, mixing well.
Add Biscuit Mix and brown sugar.
Spoon batter into prepared muffin tin, filling cups two-thirds full.
Bake in preheated oven for 18 to 20 minutes.
Orange Muffins: Add a little grated orange zest, plus 2 to 3 tbsp (25 to 45 mL) sugar for a sweeter muffin.
HINT: Use a packaged muffin mix, or one of your homemade mix recipes, to make a good quick coffee cake.
Bake in a square pan and top with cinnamon and sugar.
