Lemon Banana Oat Bran Muffins
|All purpose flour||1 1⁄2 Cup (24 tbs)|
|Oat bran cereal||3⁄4 Cup (12 tbs)|
|Baking soda||1 Teaspoon|
|Granulated sugar||1 Cup (16 tbs)|
|Margarine/Butter||1⁄2 Cup (8 tbs)|
|Mashed ripe bananas||1 Cup (16 tbs)|
|Lemon zest||1⁄2 Teaspoon|
|Lemon juice||1 Teaspoon|
In a bowl combine flour, cereal, baking soda and salt.
Mix together well.
In a large bowl, cream together sugar and margarine until light and fluffy.
Stir in bananas, eggs and zest.
In another bowl, combine milk and juice.
Add to banana mixture alternately with flour mixture, stirring after each addition.
Fold in nuts.
Spoon batter into prepared muffin tin, filling cups to the top.
Bake in preheated oven for 15 to 20 minutes.
