Corn Muffins

Made with corn muffin mix, these corn muffins are easy and healthy and very simple indeed. Add in some more ingredients if you want and bake yourself a healthy little muffin to snack on.
Ingredients
  Egg 1
  Water 250 Milliliter
  Corn muffin mix 2 1⁄3 Cup (37.33 tbs)
  Butter/Margarine 1⁄4 Cup (4 tbs)
Directions

In a bowl with a fork mix together egg and water until blended.
Add Corn Muffin Mix and melted butter, stirring just to blend.
Spoon batter evenly into prepared muffin tin.
Bake in preheated oven for 20 minutes or until golden brown.
HINT: To check baking powder for freshness, stir 1 tsp (5 mL) baking powder into 1/2 cup (125 mL) boiling water.
If the mixture does not fizz and bubble, the baking powder has lost its leavening power and should be thrown out.
