|Corn muffin mix||2 1⁄3 Cup (37.33 tbs)|
|Butter/Margarine||1⁄4 Cup (4 tbs)|
In a bowl with a fork mix together egg and water until blended.
Add Corn Muffin Mix and melted butter, stirring just to blend.
Spoon batter evenly into prepared muffin tin.
Bake in preheated oven for 20 minutes or until golden brown.
HINT: To check baking powder for freshness, stir 1 tsp (5 mL) baking powder into 1/2 cup (125 mL) boiling water.
If the mixture does not fizz and bubble, the baking powder has lost its leavening power and should be thrown out.
