Surprise Cornmeal Muffins
|Yellow cornmeal||1 Cup (16 tbs)|
|Pastry flour||1 1⁄4 Cup (20 tbs)|
|Baking soda||1 Teaspoon|
|Baking powder||2 Teaspoon|
|Shortening/Butter||1⁄2 Cup (8 tbs)|
|Granulated sugar||1⁄2 Cup (8 tbs)|
|Plain yogurt||1⁄2 Cup (8 tbs)|
|Filling||1⁄4 Cup (4 tbs)|
In a large bowl, combine cornmeal, flour, baking soda, baking powder and salt.
In another bowl, cream together shortening and sugar.
Beat in egg, milk and yogurt.
Pour into dry ingredients and stir just until moistened.
Spoon half the batter evenly into prepared muffin tin.
Top each with 1 tsp (5 mL) filling and then spoon remaining batter evenly over top.
Bake in preheated oven for 20 to 25 minutes or until golden brown.
