Edam Muffins

Ingredients
  All purpose flour 2 Cup (32 tbs)
  Sugar 1⁄4 Cup (4 tbs)
  Baking powder 2 1⁄2 Teaspoon
  Salt 1⁄2 Teaspoon
  Edma cheese 1 1⁄2 Cup (24 tbs), grated
  Milk 1 Cup (16 tbs)
  Egg 1
  Melted butter 1⁄4 Cup (4 tbs)
Directions

Heat oven to 400 degrees.
Grease 16 medium muffin cups.
Sift flour, sugar, baking powder and salt together into mixing bowl.
Add cheese and mix lightly with a fork until cheese is coated with dry ingredients.
Beat milk, egg and butter together lightly with a fork.
Add to first mixture and stir with fork only until dry ingredients are dampened (about 30 strokes, batter will still be lumpy).
Spoon into prepared pans, filling them about 2/3 full.
Bake 20 minutes or until nicely browned.
Serve hot.
