|Quick cooking rolled oats||1 Cup (16 tbs)|
|Buttermilk/Sour milk||1 Cup (16 tbs)|
|Brown sugar||1⁄2 Cup (8 tbs)|
|Shortening||1⁄2 Cup (8 tbs)|
|Chopped dates||1 Cup (16 tbs)|
|Sifted all purpose flour||1 Cup (16 tbs)|
|Baking powder||1 Teaspoon|
Combine rolled oats and milk in bowl and let stand at room temperature, 1 hour.
Heat oven to 400 degrees.
Grease 12 large muffin cups.
Add egg and brown sugar to oatmeal mixture and beat well.
Beat in shortening and dates.
Sift flour, baking powder, soda and salt together into mixture and stir just until dry ingredients are dampened.
Spoon into prepared muffin cups and bake about 20 minutes or until nicely browned and tops spring back when touched lightly.
Serve warm or cold.
