Bran Muffins

  Ready-to-eat bran cereal 1 1⁄2 Cup (24 tbs)
  Milk 1 1⁄4 Cup (20 tbs)
  Egg 1
  Oil 1 Cup (16 tbs)
  Flour 1 1⁄4 Cup (20 tbs)
  Baking powder 3 Teaspoon
  Salt 1⁄2 Teaspoon
  Sugar 1⁄2 Cup (8 tbs)

In large mixing bowl, add milk to bran. Let stand 2 minutes. Add egg and oil, and beat to blend. Sift together flour, baking powder, salt, and sugar. Add to bran mixture, and mix gently to just barely dampen flour (batter will be lumpy). Spoon gently into well-greased muffin tins. Bake 25 minutes, or until lightly browned. Remove from tins while warm. Variations: Add with the flour mixture 1/2 cup chopped nuts or raisins or softened small pieces of dried apricots or prunes.
