|Canned unsweetened pineapple juice||1 Cup (16 tbs)|
|Egg||1 , slightly beaten|
|Melted shortening||1⁄4 Cup (4 tbs)|
|All purpose flour||1 3⁄4 Cup (28 tbs)|
|Baking powder||4 Teaspoon|
|Grated orange rind||1 Teaspoon|
Beat pineapple juice into slightly beaten egg.
Sift flour with 1/4 cup sugar, baking powder and salt, and add to egg mixture.
Stir quickly until dry ingredients are just moistened.
Fill greased muffin pans 2/3 full.
Mix 2 tablespoons sugar and orange rind, and sprinkle over muffins! Bake at 400°F. 20-25 minutes.
Makes 10-12 muffins.
Note: Add 1/4-1/3 cup well-drained crushed pineapple if you wish.
