Pineapple Muffins

Ingredients
  Canned unsweetened pineapple juice 1 Cup (16 tbs)
  Egg 1 , slightly beaten
  Melted shortening 1⁄4 Cup (4 tbs)
  All purpose flour 1 3⁄4 Cup (28 tbs)
  Baking powder 4 Teaspoon
  Salt 1⁄2 Teaspoon
  Sugar 2 Tablespoon
  Grated orange rind 1 Teaspoon
Directions

Beat pineapple juice into slightly beaten egg.
Add shortening.
Sift flour with 1/4 cup sugar, baking powder and salt, and add to egg mixture.
Stir quickly until dry ingredients are just moistened.
Fill greased muffin pans 2/3 full.
Mix 2 tablespoons sugar and orange rind, and sprinkle over muffins! Bake at 400°F. 20-25 minutes.
Makes 10-12 muffins.
Note: Add 1/4-1/3 cup well-drained crushed pineapple if you wish.
