Banana Orange Muffins
|Butter||1 Cup (16 tbs), softened|
|Sugar||1 Cup (16 tbs)|
|All purpose flour||3 Cup (48 tbs)|
|Baking powder||1 Teaspoon|
|Buttermilk||3⁄4 Cup (12 tbs)|
|Baking soda||1 Teaspoon|
|Dried banana slices||3⁄4 Cup (12 tbs), chopped|
|Orange rind||1⁄2 Teaspoon, grated|
|Orange juice||1⁄4 Cup (4 tbs)|
Cream butter; gradually add sugar, beating until light and fluffy.
Add the eggs, one at a time, beating well after each addition.
Combine flour and baking powder; set aside.
Combine buttermilk and soda; add to creamed mixture alternately with flour mixture, beginning and ending with flour mixture.
Stir in remaining ingredients.
Fill greased muffin pans two-thirds full.
Bake at 400Â° for 15 to 20 minutes.
