Oatmeal Muffins

Ingredients
  Regular oats 1 Cup (16 tbs)
  Buttermilk 1 Cup (16 tbs)
  Firmly packed brown sugar 1⁄2 Cup (8 tbs)
  Vegetable oil 1⁄2 Cup (8 tbs)
  Egg 1
  All purpose flour 1 Cup (16 tbs)
  Baking powder 1 Teaspoon
  Baking soda 1⁄2 Teaspoon
  Salt 1⁄2 Teaspoon
Directions

Combine oats and buttermilk; let stand 1 hour.
Add sugar, oil, and egg to oat mixture; mix well.
Combine flour, baking powder, soda, and salt in a large bowl; make a well in center of mixture.
Add oat mixture to dry ingredients, stirring just until moistened.
Spoon into greased muffin pans, filling two-thirds full.
Bake at 400° for 20 to 25 minutes.
