These Spinach Cake Muffins are perfectly sweet and a great way to get your kids to eat their greens! Who says kids don't like their greens?! These muffins have just the perfect amount of sweetness and an appealing bright green color, but no intense spinach flavor. No matter what Chloe says, these muffins are not for worms!!!! Vanilla extract | 2 Teaspoon | |
Fresh spinach | 1 Cup (16 tbs) , packed | |
Sugar | 1 Cup (16 tbs) | |
Vegetable oil/Canola oil | 2 Tablespoon | |
All purpose flour | 5 Cup (80 tbs) | |
Baking powder | 1 Teaspoon | |
Baking soda | 1 Teaspoon | |
Salt | 1 Teaspoon |
GETTING READY
1. Preheat oven to 350 degree F.
MAKING
2. Place the apple sauce, egg, vanilla extract, spinach, sugar and oil in a food processor and puree.
3. Place the remaining dry ingredients in a separate bowl and combine.
4. Pour the spinach puree in a large mixing bowl.
5. Slowly mix the dry ingredients into the wet until combined.
6. Spoon batter into a greased mini muffin tins, filling each cup 2/3 of the way.
7. Bake for 12 minutes.
SERVING
8. Serve Spinach Cake Muffins warm.
