Vegan Banana Nut Muffins

A tasty and nutritious breakfast or anytime muffin. Make up a batch on Sunday and have muffins ready for breakfast all week. Fiber rich foods such as these muffins, are essential for good health. They help in lowering cholesterol, controlling blood sugar levels and aid in weight loss.
  Whole wheat flour 1 Cup (16 tbs)
  Raw sugar 4 Tablespoon (organic)
  Toasted oat bran 4 Tablespoon
  Baking powder 2 Teaspoon
  Baking soda 1 Teaspoon
  Cinnamon 2 Teaspoon
  Salt 1 Teaspoon
  Walnuts 8 Tablespoon, chopped
  Vegetable oil/Canola oil 8 Tablespoon
  Ripe banana 1 Large, mashed
  Water 1 Cup (16 tbs)
  Vanilla extract 2 Teaspoon
  Apple cider vinegar 1 Teaspoon

1. Preheat oven to 350 degrees F.
2. Place paper cupcake liners in a 12-cup muffin pan.

3. Mix together the dry ingredients ie. flour, sugar, oat bran, baking powder and soda, cinnamon, salt and walnuts. Give the ingredients a good stirring.
4. In a separate bowl mix together most of the wet ingredients ie. oil, banana, water and vanilla.
5. Add the wet ingredients to the dry ingredients. Then add the apple cider vinegar. Mix until the wet and dry ingredients are combined well, being careful not to over mix.
6. Fill the muffin pans evenly with the mixture. Use a tablespoon to drop the batter into the cups.
7. Bake the muffins for 20-22 minutes or until a toothpick comes out clean and dry.
8. Let the muffins cool in the pan once out of the oven.

9. Serve them warm. Enjoy as a breakfast or as an afternoon-evening snack.
