Raisin-Orange Muffins

Ingredients
  Sifted flour 3 Cup (48 tbs)
  Baking powder 4 Teaspoon
  Sugar 3 Tablespoon
  Salt 2 Teaspoon
  Shortening 1⁄2 Cup (8 tbs)
  Eggs 2 , beaten
  Milk 1 1⁄4 Cup (20 tbs)
  Raisins 2⁄3 Cup (10.67 tbs), chopped
  Orange rind 1 1⁄2 Teaspoon, grated
  Nuts 1⁄2 Cup (8 tbs), chopped
Directions

Sift flour, baking powder, sugar and salt together; cut in shortening.
Combine eggs and milk; add to flour mixture.
Stir enough just to dampen flour.
Add raisins, orange rind and nuts; stir lightly.
Place in greased muffin pans.
Bake at 425 degrees for 25 min- utes.
