A very nice, tender muffin and a great way to use up any leftover canned pumpkin. DH loved these! They smell really nice while baking too... If you don't have any oranges just leave the grated orange rind out and you'll just have scrumptious Pumpkin Muffins instead.
Ingredients
  All purpose flour 1 1⁄2 Cup (24 tbs)
  Baking powder 1 Teaspoon
  Baking soda 1 Teaspoon
  Salt 1⁄2 Teaspoon
  Cinnamon 1⁄2 Teaspoon
  Nutmeg 1⁄2 Teaspoon
  Ginger 1⁄2 Teaspoon
  Raisins 1⁄2 Cup (8 tbs)
  Egg 1
  Sugar 1⁄4 Cup (4 tbs)
  Vegetable oil 1⁄3 Cup (5.33 tbs)
  Pumpkin 1 Cup (16 tbs)
  Milk 1⁄2 Cup (8 tbs)
