|All-purpose flour||2 Cup (32 tbs)|
|Baking powder||3 Teaspoon|
|Milk||1 Cup (16 tbs)|
|Pure vanilla extract||1 Teaspoon|
|Shortening||3 Tablespoon, melted|
1 Prepare the muffin cups by greasing the bottoms well or line with paper baking cups.
2 In a bowl, sift flour, measure and sift again with dry ingredients.
3 In another bowl, beat egg lightly.
4 Blend in milk, vanilla and melted shortening.
5 Mix with the dry ingredients.
6 Mix just until dry ingredients are moistened, 10 to 15 strokes.
7 Into muffin cups, spoon the mixture and bake in 425°Fahrenheit oven for 20 to 25 minutes.
8 Serve hot.
