Blt Egg Muffin
|Skim milk/Non fat milk||1⁄4 Cup (4 tbs)|
|Sun dried tomato halves||4 , chopped (not packed in oil)|
|Bacon slices||2 , crumbled|
|English muffin||2 Ounce, split in half and toasted|
1) With the help of a fork, combine together the eggs, milk and pepper in a small microwavable bowl and beat till the ingredients have all combined together well. Add the tomatoes and stir well.
2) For 2 minutes, microwave the mixture on HIGH (100%). Stir twice during cooking.
3) Add the bacon, stir well and microwave on HIGH for 1 more minute.
4) With a lettuce leaf and half of the egg mixture, top each muffin and serve while still warm. Makes a healthy and nutritious breakfast dish as well as snack.
