Double Oat Muffins
|Quaker oat bran hot cereal||2 Cup (32 tbs) (Uncooked)|
|Firmly packed brown sugar||1⁄3 Cup (5.33 tbs)|
|All purpose flour||1⁄4 Cup (4 tbs)|
|Baking powder||2 Teaspoon|
|Skim milk||1 Cup (16 tbs)|
|Egg whites||2 , slightly beaten|
|Vegetable oil||3 Tablespoon|
|Vanilla||1 1⁄2 Teaspoon|
|Quick oats||1⁄4 Cup (4 tbs) (Quick / Old Fashioned, Uncooked)|
|Firmly packed brown sugar||1 Tablespoon|
Heat oven to 400°F.
Line 12 medium muffin cups with paper baking cups.
Combine oat bran, 1/3 cup brown sugar, flour, baking powder, salt and nutmeg.
Add combined milk, egg whites, oil and vanilla, mixing just until moistened.
Fill muffin cups almost full.
Combine oats and remaining 1 tablespoon brown sugar; sprinkle evenly over batter.
Bake 20 to 22 minutes or until golden brown.
