Johnny Appleseed Muffins

Ingredients
  Whole wheat flour 1 Cup (16 tbs)
  Unbleached flour 1⁄2 Cup (8 tbs)
  Bran flakes cereal 1 Cup (16 tbs)
  Baking powder 1 Tablespoon
  Baking soda 1⁄2 Teaspoon
  Ground cinnamon 1 Teaspoon
  Grated nutmeg 1⁄2 Teaspoon
  Ground cloves 1⁄2 Teaspoon
  Applesauce 1 1⁄4 Cup (20 tbs)
  Fat free egg substitute 1⁄2 Cup (8 tbs)
  Honey 1⁄3 Cup (5.33 tbs)
  Oil 2 Tablespoon
  Apple 1 Medium, shredded
Directions

In a large bowl, combine the whole-wheat flour, unbleached flour, cereal, baking powder, baking soda, cinnamon, nutmeg and cloves.
In a medium bowl, whisk together the applesauce, eggs, honey and oil.
Stir in the apples.
Pour over the dry ingredients.
Stir with a rubber spatula until the flour is just moistened; do not over mix.
Coat 12 muffin cups with no-stick spray.
Divide the batter among the cups.
Bake at 425° for 20 minutes.
