Coffee Peanut Muffins

  All purpose flour 2 Cup (32 tbs)
  Baking powder 3 Teaspoon
  Salt 1 Teaspoon
  Sugar 1⁄4 Cup (4 tbs)
  Peanut butter 1⁄4 Cup (4 tbs) (Any Style)
  Egg 1
  Milk 1⁄2 Cup (8 tbs)
  Cold strong coffee 1⁄2 Cup (8 tbs)
  Chopped peanuts 1⁄2 Cup (8 tbs)

Mix first 4 ingredients in bowl and cut in peanut butter until crumbly.
Add next 3 ingredients and stir only until dry ingredients are moistened.
Fill greased medium muffin-pan cups two thirds full.
Sprinkle with peanuts and bake in preheated hot oven (400°F.) about 25 minutes.
Makes 12 to 15 muffins.
