Banana Date Muffins

Ingredients
  All purpose flour 33 Tablespoon (2 Cups Plus 1 Tablespoon)
  Double acting baking powder 2 Tablespoon
  Cinnamon 3⁄4 Teaspoon
  Salt 1⁄2 Teaspoon
  Low calorie margarine 1⁄2 Cup (8 tbs)
  Granulated sugar 1⁄2 Cup (8 tbs)
  Egg 1
  Vanilla extract 1 Teaspoon
  Bananas 3 , peeled, mashed
  Bananas 3 , peeled and mashed
  Wheat bran flakes cereal 3⁄4 Ounce
  Pitted dates 12 , diced
Directions

GETTING READY
1. Preheat oven to 400°F
2. Spray a coat of cooking spray on twelve 2.5" diameter muffin-pan cups

MAKING
3. On a sheet of wax paper, sift together the flour, baking powder, cinnamon and salt and set it aside
4. In a medium bowl, mix together the sugar, margarine, egg and vanilla nad beat till fluffy with an electric mixer
5. Stir bananas into adn add flour mixture; beat till well blended and stir in cereal and dates
6. Fill the muffins with equal amounts of the mixture and bake for twenty five minutes; remove and place on a wire rack to cool

SERVING
7. Serve as appropriate
