Prune Bran Muffins

Ingredients
  Egg substitute 1⁄4 Cup (4 tbs)
  Low fat buttermilk 1 Cup (16 tbs)
  Maple syrup 1⁄3 Cup (5.33 tbs)
  Canola oil 3 Tablespoon
  Unprocessed bran 2 Cup (32 tbs)
  Rice bran 2⁄3 Cup (10.67 tbs)
  Baking powder 1 Tablespoon
  Ground allspice 1⁄2 Teaspoon
  Chopped prunes 1 Cup (16 tbs)
Directions

GETTING READY
1.Preheat the oven to 400 F.
2.Arrange paper baking cups in muffin pan cups or oil the muffin pan cups with cooking vegetable spray.

MAKING
3.Take a bowl, mix egg substitute, buttermilk, maple syrup and oil.
4.Put bran, baking powder, ground all spice and chopped prunes to the mixture and stir well to make a moist and lumpy batter.
5.Transfer the batter to muffin cups and bake for 20 minutes.
6.Check for the doneness of muffins by using a wooden pick.
7.Take the muffins out of the pan and allow them to settle for 5 minutes at room temperature.

SERVING
8.Serve warm with tea/ coffee.
