|Plain flour||8 Ounce|
|Brown sugar||4 Ounce|
|Coconut||6 Ounce, desiccated|
|Baking powder||2 Teaspoon|
|Mixed spice||1⁄2 Teaspoon|
|Mixed dried fruit||4 Ounce|
1 Preheat the oven at 400 degrees farenheit (200°C/Gas 6).
2 Prepare a 12 hole muffin tin, lined with paper cases (or base lined with circles of greaseproof paper).
3 In a bowl, sieve flour, salt, spice and baking powder.
4 Rub in margarine.
5 Add remaining dry ingredients.
6 Beat eggs and add to the mixture.
7 Add milk if necessary - mixture should be of a dropping consistency.
8 Half fill the prepared muffin tins with the mixture.
9 Bake for 5 minutes then reduce the temperature to 350 degrees farenheit (180°C/Gas 4)
10 Cook for further 15-20 minutes until golden.
11 Serve as a tea time snack or for breakfast.
