Jam and Coconut Muffins
|Plain flour||10 Ounce|
|Egg||1 (Size 3)|
|Bread soda/3 teaspoon baking powder||2 Teaspoon|
|Buttermilk/Milk||1⁄2 Pint (300 Milliliter)|
|Caster sugar||4 Ounce|
|Vegetable oil||6 Tablespoon|
1 Preheat the oven 400 degrees farenheit (200°C/Gas 6).
2 Grease a 12 hole muffin tin.
3 In a large bowl, sift flour and raising agent .
4 Stir in sugar and coconut.
5 Beat the egg, milk and oil together.
6 Stir into the flour mixture.
7 Place a large tablespoon of mixture into each muffin tin.
8 Put a teaspoon jam in the centre and then spoon more mixture on top until the tin is two-thirds full.
9 Bake for 25-30 minutes until well risen and firm to touch.
10 Serve as a tea time snack or with breakfast.
