Jam And Coconut Muffins

Ingredients
  Plain flour 10 Ounce
  Egg 1 (Size 3)
  Bread soda/3 teaspoon baking powder 2 Teaspoon
  Bread 2 Teaspoon
  Buttermilk/Milk 1⁄2 Pint (300 Milliliter)
  Caster sugar 4 Ounce
  Vegetable oil 6 Tablespoon
  Coconut 4 Ounce
  Jam 3 Tablespoon
Directions

GETTING READY
1 Preheat the oven 400 degrees farenheit (200°C/Gas 6).
2 Grease a 12 hole muffin tin.

MAKING
3 In a large bowl, sift flour and raising agent .
4 Stir in sugar and coconut.
5 Beat the egg, milk and oil together.
6 Stir into the flour mixture.
7 Place a large tablespoon of mixture into each muffin tin.
8 Put a teaspoon jam in the centre and then spoon more mixture on top until the tin is two-thirds full.
9 Bake for 25-30 minutes until well risen and firm to touch.

SERVING
10 Serve as a tea time snack or with breakfast.
