Orange Pecan Muffins
|All purpose flour||1⁄2 Cup (8 tbs)|
|Rice bran||1⁄2 Cup (8 tbs)|
|Baking powder||1 Tablespoon|
|Sugar||1⁄3 Cup (5.33 tbs)|
|Baking soda||1 1⁄2 Teaspoon|
|Chopped pecans||1⁄4 Cup (4 tbs)|
|Canola oil||3 Tablespoon|
|Vanilla extract||1 Teaspoon|
|Orange juice||3⁄4 Cup (12 tbs)|
|Grated orange peel||1 Tablespoon|
|Egg whites||2 , beaten|
Preheat the oven to 400 F.
Arrange paper baking cups in muffin pan cups or oil the muffin pan cups with cooking vegetable spray.
Take a bowl, mix flour, bran, baking soda, baking powder, sugar and pecans into it.
In a cup, mix oil and vanilla with orange juice and peel.
Add flour mixture and stir well.
Make a well in the center of the mixture and put beaten egg whites into it.
Transfer the batter into muffin pan cups.
Bake for 17- 20 minutes and check for doneness using a wooden pick.
Take the muffins out of the pan and allow them to stay at room temperature for 5 minutes.
Serve muffins in a tray with tea/ coffee.
