Apple Muffins

Ingredients
  Shortening 1⁄4 Cup (4 tbs)
  White sugar 3⁄4 Cup (12 tbs)
  Vanilla 1⁄2 Teaspoon
  Egg 1
  Cream 1 Tablespoon
  All purpose flour 1 Cup (16 tbs)
  Baking soda 1⁄2 Teaspoon
  Baking powder 1 Teaspoon
  Salt 1⁄4 Teaspoon
  Cinnamon 1⁄2 Teaspoon
  Nutmeg 1⁄4 Teaspoon
  Ginger 1⁄4 Teaspoon
Directions

Cream shortening and sugar until fluffy.
Beat in vanilla, egg and cream.
Stir together dry ingredients and add by hand to creamed mixture, stirring just to moisten.
Avoid too much handling at this stage.
Add apples, folding in gently.
Fill greased muffin tins.
Bake at 350°F for 20 to 25 minutes.
