No Fuss Fig Muffins
|Buttermilk baking mix||2 Cup (32 tbs)|
|Chopped figs||1⁄2 Cup (8 tbs)|
|Raisins||1⁄4 Cup (4 tbs)|
|Packed brown sugar||1⁄2 Cup (8 tbs)|
|Canola oil||3 Tablespoon|
|Nonfat milk||3⁄4 Cup (12 tbs)|
|Almond extract||1⁄2 Teaspoon|
|Egg whites||2 , beaten|
1.Preheat the oven to 400F.
2.Take muffin pan cups and place paper baking cups in it or oil the cups using a vegetable spray.
3.Take a bowl, mix figs, raisins and sugar in it.
4.Fold in a mixture of oil, milk and almond extract.
5.Gently mix with a spoon or spatula to make a lumpy batter.
6.Make a well in the center and put beaten egg whites.
7.Transfer the batter carefully in the muffin cups.
8.Bake for 17- 20 minutes and once done check for doneness by inserting a wooden pick.
9.Once baked, take the muffins out and allow them to settle.
10.Serve with tea/ coffee.
