Hush Puppy Muffins

Ingredients
  Yellow cornmeal 3⁄4 Cup (12 tbs) (Not Self-Rising Or Cornmeal Mix)
  All purpose flour 2 Tablespoon
  Salt 3⁄4 Teaspoon
  Baking soda 1⁄8 Teaspoon
  Ground red pepper 1 Dash
  Onion 2 Tablespoon, finley chopped
  Low fat buttermilk 2 Tablespoon
  Vegetable oil 1 1⁄2 Teaspoon
  Egg 1 Large
  Cooking spray 1
Directions

GETTING READY
1. Preheat your oven to 425° F

MAKING
2. In a bowl, mix together the cornmeal, flour, salt, baking soda, and red pepper
3. In another bowl, combine the buttermilk, eggs, onions and oil; stir well and add it to the cornmeal mixture and blend till just moist
4. Divide this batter into six one-and-three-quarters inch muffin cups coated with cooking spray, and bake them in the oven for almost fifteen minutes at 425° F
5. When done and golden in colour, remove from the pan quickly

SERVING
5. Serve as required
