Strawberry Filled Banana Muffin

Ingredients
  Bananas 3 Large
  Granulated sugar 3⁄4 Cup (12 tbs)
  Melted butter 3 Ounce
  Egg 1
  All purpose flour 1 1⁄2 Cup (24 tbs)
  Baking powder 1 Teaspoon
  Baking soda 1 Teaspoon
  Salt 1⁄2 Teaspoon
  Strawberries 9 Small, destemmed
  Philadelphia cream cheese 8 Ounce, softened
  Butter 1⁄4 Cup (4 tbs), softened
  Icing sugar 1 Cup (16 tbs)
  Vanilla extract 1 1⁄2 Teaspoon

Directions

Preheat your oven to 350F (180C).
In one bowl mix mashed bananas, sugar, melted butter, egg and vanilla extract.
In another bowl mix flour, baking powder, baking soda and salt.
Add dry ingredients to wet ingredients as you are mixing, then mix together (don’t over mix).
Line 12 cup muffin tin with 9 muffin cups.
Butter 1/3 cup measurement.
Scoop the batter and pour to the muffin cups.
Drown 1 strawberry in each muffin and cover it completely with batter.
Pop the muffin tin into the oven for approximately 15 to 20 minutes, or until knife inserted into the side of the muffin comes out clean.
Take the muffins out and let them cool completely before removing and frosting.
Frosting:
Beat the butter and cream cheese until fluffed; use electrical mixer.
Add icing sugar in batches and incorporate well.
Then beat it for minute until smooth consistency.
Pop to refrigerator to set for at least 30 minutes before frosting.
Frost the muffins and garnish with strawberries.
