Sweet Potato Muffins
|All purpose flour||1 3⁄4 Cup (28 tbs)|
|Baking powder||3 Teaspoon|
|Brown sugar||1 Tablespoon|
|Walnuts||1⁄2 Cup (8 tbs), coarsely chopped|
|Eggs||2 , beaten|
|Milk||3⁄4 Cup (12 tbs)|
|Cooked sweet potatoes||1 1⁄4 Cup (20 tbs), mashed|
|Melted butter||1⁄4 Cup (4 tbs)|
|Ground cinnamon||1 Teaspoon|
|Granulated sugar||1 Tablespoon|
Sift first 3 ingredients into bowl.
Add brown sugar and nuts; mix well.
Combine next 4 ingredients and mix well.
Add to first mixture, stirring just enough to moisten dry ingredients.
Fill greased 2 1/4-inch muffin cups two thirds full of batter.
Bake in preheated hot oven (425° F.) for about 25 minutes.
Sprinkle tops with mixture of cinnamon and granulated sugar.
