Jeanne Brown's Refrigerator Muffins
|All bran||4 Cup (64 tbs) (Kellogg's)|
|Oleo||1 Cup (16 tbs)|
|Sugar||3 Cup (48 tbs)|
|Baking soda||5 Teaspoon|
|100% bran||2 Cup (32 tbs), pour 2 cup boiling water on this bran and let stand (Nabisco)|
|Boiling water||2 Cup (32 tbs)|
|Flour||5 Cup (80 tbs)|
Cream shortening and sugar; add eggs, buttermilk, Nabisco bran.
Add dry ingredients; fold in Kelloggs bran.
Makes 80 medium sized muffins.
Pour batter into greased muffin tins and bake 15 minutes at 400°.
This batter keeps in the refrigerator indefinitely - just use as needed.
