Organic Lemon Poppy Seed Muffins

Marta makes some muffins for the first time.She and Brock make an exciting announcement about a challenge for July,and the Monkeys are back on the couch for some fun and games!
Ingredients
  Lemon zest 2 Tablespoon
  Cane sugar 1⁄2 Cup (8 tbs) (organic)
  Poppy seeds 2 Tablespoon
  Chia seeds 1 Tablespoon
  Water 2 Cup (32 tbs)
  Brown rice flour 3 Cup (48 tbs)
  Coconut oil 1⁄2 Cup (8 tbs)
Directions

GETTING READY
1. Preheat the oven at 400 degrees F. Line muffin tray with cups and set aside.

MAKING
2. In a large bowl add in all the ingredients and mix well with the spatula.
3. Spoon in the batter to the lined muffin cups.
4. Bake in oven for 20 minutes at 400 degrees F.

SERVING
5. Serve Organic Lemon Poppy Seed Muffins with herbal tea.
