Red Pepper Banana Muffins with Maple Butter

Ingredients
For the banana bread
  Soft butter 1⁄2 Cup (8 tbs)
  Brown sugar 1 Cup (16 tbs)
  Egg 2 , beaten
  Ripe bananas 1 Cup (16 tbs), mashed
  All purpose flour 1 Cup (16 tbs)
  Baking soda 1 Teaspoon
  Hot water 1⁄3 Cup (5.33 tbs)
  Chopped walnuts 3⁄4 Cup (12 tbs)
  Red maestro sweet bell peppers 1 Cup (16 tbs), roasted and pureed
For whipped butter
  Soft unsalted butter 1 Pound
  Maple syrup 1 Cup (16 tbs)
  Yellow maestro sweet bell peppers 1 Cup (16 tbs), roasted and pureed
Directions

GETTING READY
1. Preheat oven to 325ºF.

MAKING
2. Melt the butter and add the sugar in a large mixing bowl. Add eggs and bananas, blend until smooth. Add flour, salt and baking soda.
3. Stir in hot water and walnuts.
4. Add roasted Maestro™ red pepper purée.
5. Separate the mixture between 2 loaf pans (or as individual muffins).
6. Bake for 1 hour and let cool.
7. For the maple butter - beat the softened butter for 5 minutes until light and fluffy in mixer.
8. Add maple syrup, Maestro™ pepper purée and combine.

SERVING
9. Serve at room temperature.
