Rice Flour Muffins

Ingredients
  Brown rice flour 2 Cup (32 tbs)
  Salt 1 Teaspoon
  Egg yolks 3 , slightly beaten
  Maple syrup/Honey 2 Tablespoon
  Milk 1 Cup (16 tbs)
  Oil 2 Tablespoon
  Egg whites 3 , stiffly beaten
Directions

Preheat oven to 400°F.
Combine all ingredients except egg whites.
Mix thoroughly and beat with whisk until light (approximately 2 minutes).
Fold in egg whites.
Pour into oiled muffin tins and bake in preheated oven for 20 minutes, or until done.
