Whole Wheat Muffins
|All purpose flour||1⁄2 Cup (8 tbs)|
|Baking powder||2 1⁄2 Teaspoon|
|Whole wheat flour||1 1⁄2 Cup (24 tbs)|
|1% low fat milk||3⁄4 Cup (12 tbs)|
|Corn oil/Safflower oil||1⁄3 Cup (5.33 tbs)|
|Honey||1⁄3 Cup (5.33 tbs)|
|Orange rind||1 Tablespoon, grated|
Preheat oven to 400 degrees.
Into a medium bowl sift all-purpose flour, baking powder, salt and cinnamon.
Stir in whole wheat flour.
In a small bowl beat milk, oil, honey, egg and orange rind together.
Add to dry ingredients; mix just until moistened.
Spray muffin cups with vegetable cooking spray.
Fill muffin cups 2/3 full.
Bake for 15 to 20 minutes.
