Natural Bran Muffins

Ingredients
  100% bran 2 Cup (32 tbs)
  Boiling water 2 Cup (32 tbs)
  Unbleached flour 5 Cup (80 tbs)
  Baking soda 5 Teaspoon
  Granulated sugar 3 Cup (48 tbs)
  Shortening 1⁄4 Cup (4 tbs)
  Egg/2 egg whites 1
  Buttermilk 1 Quart
  40% bran flakes 4 Cup (64 tbs)
  Dried fruit and nuts 1 Cup (16 tbs) (optional)
Directions

Preheat oven to 400 degrees.
In a medium bowl combine 100% bran cereal and boiling water.
Let stand until cool.
In a sifter combine flour and baking soda.
Into a large mixing bowl sift flour mixture.
Add sugar, shortening and egg or egg whites; mix well.
Add buttermilk and bran flakes; mix well.
Stir in dried fruit.
Grease muffin cups well.
Fill the prepared muffin cups 2/3 full.
Bake for 20 to 25 minutes.
