|Sugar||1⁄4 Cup (4 tbs)|
|Egg||1 , slightly beaten|
|Sifted flour||1 Cup (16 tbs)|
|Baking powder||2 1⁄2 Teaspoon|
|Bran||1 Cup (16 tbs)|
|Milk||1⁄4 Cup (4 tbs)|
|Butter/Margarine||1 Teaspoon (for greasing muffin tins)|
1. Start oven, set at Hot, 425° F. Grease pans for 12 muffins.
2. Cream the butter or margarine. Add the sugar, egg and salt and mix thoroughly.
3. Sift the flour with the baking powder and combine with the bran. Add to the creamed mixture with the milk and mix lightly. Do not try to smooth the batter.
4. Fill muffin pans 2/3 full. Bake about 25 minutes.
