Whole Wheat Muffins Sweetened With Molasses
|Sifted all purpose flour||1 Cup (16 tbs)|
|Baking powder||2 Teaspoon|
|Unsifted whole wheat flour||1 Cup (16 tbs)|
|Molasses||1⁄4 Cup (4 tbs)|
|Egg||1 , beaten|
|Milk||1 Cup (16 tbs)|
|Butter/Margarine||1⁄4 Cup (4 tbs), melted and cooled (1/2 Stick)|
1. Sift all-purpose flour, baking powder and salt into a medium-size bowl; stir in whole wheat flour and make a well in center of ingredients.
2. Combine molasses, egg, milk and melted, cooled butter or margarine in a small bowl; add all at once to flour mixture; stir lightly just until liquid is absorbed. (Batter will be lumpy.)
3. Spoon into 12 greased medium-size muffin-pan cups, filling each 2/3 full.
4. Bake in a hot oven (400°) 25 minutes or until golden brown and springy to the touch. Serve hot.
