Dried Fruit Muffins
|Vegetable oil||1 Teaspoon (Rapeseed)|
|Caster sugar||8 Tablespoon|
|Mixed dried fruit||200 Gram|
|Wholemeal flour||4 Tablespoon|
|Semi skimmed milk||150 Milliliter|
Preheat the oven to 190°C/375°F/gas mark 5.
Grease 12 muffin moulds with vegetable oil.
Heat 6 tablespoons of caster sugar in a heavy-based pan until it dissolves.
Add the dried fruit, stir in and set aside.
Place the flour and remaining sugar into a bowl.
Whisk in the eggs and then add the milk, whisking to form a thick batter.
Pour the batter into the pan with the dried fruit and sugar mix, then divide among the muffin moulds.
Bake in the oven for 10-15 minutes.
Allow to cool and serve.
