Sugary Jam Muffins

Ingredients
  Shortening 1⁄4 Cup (4 tbs)
  Sugar 1⁄4 Cup (4 tbs)
  Egg 1
  Milk 1⁄4 Cup (4 tbs)
  Flour 1 Cup (16 tbs)
  Baking powder 3⁄4 Teaspoon
  Salt 1⁄4 Teaspoon
  Jam 2 Tablespoon
  Butter 2 Tablespoon, melted
  Cinnamon sugar 2 Tablespoon
Directions

Set Power Select at MEDIUM-LOW.
Cream together shortening and sugar; stir in egg and milk.
Add flour, baking powder and salt, stirring only until flour is moistened.
Divide 1/2 batter into 6 custard cups (6 oz ea lined with cupcake paper; spoon 1 teaspoon jam into center of each.
Top with remaining batter, spreading to cover jam.
Arrange dishes in circular pattern on glass oven tray.
Heat 5 to 6 minutes; let stand, covered, 3 minutes.
Dip tops of muffins in butter, then in cinnamon sugar.
Store, covered, until ready to serve.
