Easy Bran Raisin Muffins

Ingredients
  Butter/Margarine 2 Ounce (55 Gram)
  Plain flour 1⁄2 Ounce (45 Gram)
  Whole wheat flour 2 Ounce (55 Gram)
  Soda bicarbonate 1 1⁄2 Teaspoon
  Salt 1⁄8 Teaspoon
  Ground cinnamon 1 Teaspoon
  Bran 1 Ounce (30 Gram)
  Raisins 3 Ounce (85 Gram)
  Dark brown sugar 2 1⁄2 Ounce (65 Gram)
  Caster sugar 2 Ounce (55 Gram)
  Egg 1
  Buttermilk 8 Fluid Ounce (250 Milliliter)
  Lemon 1⁄2 , juiced
Directions

1. Preheat a 400°F/200°C/ Gas 6 oven. Grease 15 deep muffin tins.
2. Place the butter or margarine in a saucepan and melt over gentle heat. Set aside.
3. In a mixing bowl, sift together the flours, bicarbonate of soda, salt and cinnamon.
4. Add the bran, raisins and sugars and stir until blended.
5. In another bowl, mix together the egg, buttermilk, lemon juice and melted butter.
6. Add the buttermilk mixture to , the dry ingredients and stir lightly and quickly just until moistened; do not mix until smooth.
7. Spoon the mixture into the prepared muffin tins, filling the cups almost to the top. Half-fill any empty cups with water. 8. Bake until golden, 15-20 minutes. Serve warm or at room temperature.
